Ingredients

Chili

  • 2 tablespoons olive oil
  • 1 1/4 lb ground turkey breast
  • 1/2 teaspoon salt
  • 1 large onion, chopped (1 cup)
  • 2 tablespoons finely chopped garlic
  • 1 package (1.25 oz) chili seasoning mix
  • 1 can (14.5 oz) diced tomatoes in sauce, undrained
  • 1 cup Progresso™ chicken broth (from 32-oz carton)
  • 1 chipotle chile in adobo sauce (from 7-oz can), chopped
  • 1 tablespoon adobo sauce (from can of chipotle chiles)
  • 1 can (15 oz) Progresso™ black beans, drained, rinsed

Toppings, if desired

  • Sour cream
  • Shredded Monterey Jack cheese
  • Diced avocado
  • Fresh cilantro leaves

Instructions

  • Step

    In 4-quart Dutch oven, heat oil over medium-high heat. Add turkey and salt; cook 5 to 7 minutes, stirring occasionally, until turkey is no longer pink. Push turkey to outer edges of pan. Add onion and garlic to center of pan; cook 3 minutes, stirring frequently, until onion is tender.

    Add chili seasoning; cook and stir 1 minute. Add tomatoes, broth, chipotle chile and adobo sauce. Heat to boiling; reduce heat. Cover; simmer 5 minutes.

    Stir in beans; cook 5 minutes, stirring occasionally, until thoroughly heated. Garnish with sour cream, cheese, avocado and cilantro.
